COP 2013 from the sidelines


Culinary competitions can be nerve-racking! When you coach there is really nothing you can do during the actual event. It’s as if your hands are tied, just watch, pray and hope for the best from the sidelines. So yehey! Congratulations to our team Ryan Reyes & Jem Bernas !!! They won SILVER for the Modern Contemporary Filipino student category during Chefs on Parade 2013. Co-coaching was Enrique Moreno with student assistants Carlo Lim, Camille Tan and Paulo Sarmiento! Animo!

Here’s the menu :
Chicken liver pâté with root crop crips
Sous-vide duck adobo with poached egg, mesclun and calamansi vinaigrette
Southern Tagalog seared prawns & tuna, kulawo ( banana heart cooked in smoked coconut milk)
Rice cooked in coco water
Barako coffee coconut flan with fresh strawberry jam and tablea tuile
