Here’s the menu prepared by Chef Bruce Lim and the Shangri la Makati team for the AFC Gala Dinner. This event was a fund raiser for the Culinary Education Foundation.
Menu was a modern take on Filipino food. Kudos to Chef Bruce!
Mushroom and liver ravioli in duck consommé topped with spiced shredded duck and caramelized leeks (pancit Molo)
Pan-seared Coral Trout with minced squid concasse, squid ink sabayon and garlic ube mash
Beef cheek braised in peppery red wine sauce served with Queso De Bola cookies (modern caldereta)
Coconut custard Martini (buko pie) & Chef Melissa’s pandesal pudding
