Christmas cheers!

Happy holidays everyone! It has been a busy week of reunions with family and friends. I hosted a dinner on Christmas day in our ancestral home. So the ambiance was in an old post-war wooden house but the menu was Italian- Mediterranean inspired.  Here is the menu of what I cooked:

December 25, 2010

Christmas ham, Camembert cheese, olives
Pasta with Italian sausages, basil, and black olives
Poached fish with dill cream sauce
Beef Steak a la Florentina ( cooked on the spot)

Mixed greens with arugula, oranges, feta cheese, and Parmesan dressing
Marble potatoes, chick peas, leeks, with paprika sautéed in olive oil
Wild mushroom risotto
Panettone (gift  sent from ICIF) and Fruit cake


I was too busy preparing the steak that I forgot to take photos. I once read that the best way to show people you love them is to cook for them. So to my students I hope you cooked at home.

I miss my siblings who are out of the country.  So this year I cooked for my friends who have become my surrogate family. Again to those near and far..Happy holidays! Cheers! Salute!
