Halloween night… we were at Borolo, a great place for wine and antipasti at Serendra. It was also the birthday of owner Stephania Zanirato (batch 104). Loved the wine and was just so happy to relax after a hectic week of midterms. Happy Birthday Steph!
Right across is Mezzaluna were Meg Tangsioco (#102) is working as a chef. Meg as a student has always been very passionate about her craft. She and her team recently competed at the Mnl Black box …they won best entrée.
Drop by Chelsea and you will see Pat Ambrosio, Paolo Ong, Frederick Arellano,and Michelle Lim (#103) manning the kitchen. Chelsea was opened by Chef Sao del Rosario. Incidentally alumni Pinky Tse, Daphne Roque, April Ting, and Mark Custodio ( #’98) also work for M Café. M Café is a restaurant in Greenbelt also run by Chef Sao.
Polokai is famous for their jerk chicken and mouth watering ribs… and the man behind this is Chef Nick Santiago. Nick used to teach with us… now he owns Polokai together with Cristine Moreno (#102) and other partners. China Sunga (#102) and Ina Lee (#103) are the kitchen managers.
Monica Marchadesh(#102) is running Conti’s, while Donato (Donats) Javellana was part of the kitchen opening team of Italiannis.
